Peanut Butter and Jelly Donuts

  • -1 recipe Doughnuts with Brown Butter Glaze (yields 18 large donuts)
  • -1 1/2 cups raspberry jam
  • Peanut Butter Glaze
  • -¼ cup peanut butter
  • -1 ½ cups powdered sugar
  • -pinch of salt
  • -¼ cup whipping cream

 Directions

1. Prepare the donuts according to this recipe, including a dunk in the glaze (although I didn’t brown the butter for the glaze recipe).
2. Fill a pastry bag or squeezy bottle with the raspberry jam. Insert the jam into the side of the donut and gently squeeze some in. I then flip the donut around and squeeze some in on the other side too.
3. When all of the donuts are injected with jam, prepare the peanut butter glaze.
4. In a medium bowl, whisk together the peanut butter, powdered sugar, salt and cream. You can adjust the consistency with a touch more cream or powdered sugar (to be thinner or thicker).
5. Dunk the donuts into the peanut butter glaze and set aside to let the glaze firm up.
