Peppermint Snowball Cookies

Ingredients List

- 2 and 1/2 cups flour
- 1/4 tsp salt
- 1/2 cup butter
- 1 cup powdered sugar
- 1 egg
- 1/2 tsp. peppermint extract
- 1/2 tsp. vanilla
- ~~ For the icing ~~
- 2 cups confectioners”™ sugar, sifted
- 2 Tbsp unsalted butter, melted
- 1/4 tsp peppermint extract
- 3 Tbsp. milk (plus more, as needed)
- Crushed Candy Canes, for topping
Directions
For the cookies: Preheat oven to 350. In a medium sized bowl, whisk together the flour and salt. Set aside. In a large bowl, beat butter and sugar until creamy. Beat in egg and extracts. On low speed, beat in the flour mixture. Dough will be crumbly. Press the dough into a ball, wrap in plastic wrap and refrigerate at least one hour. Shape dough into 1 inch balls and bake on greased baking sheets. Bake 10-12 minutes. Move cookies to a wire rack to cool completely.
For the icing: Place the confectioners”™ sugar in a medium bowl. Add the melted butter, vanilla, and milk to the bowl and whisk until smooth. Whisk in additional milk as necessary, 1 teaspoon at a time, until you reach your desired consistency. Top with crushed candy canes
