Ingredients List
- Pre heat oven to 375 degrees. Salt and pepper room temperature roast after
- rubbing down meat with soy sauce. Place meat on rack in shallow pan. Roast
- 1 hour at 375 degrees. Turn off oven. DO NOT OPEN OVEN DOOR. Allow 3 hours
- in oven to complete coking time (a little longer won't matter). About 20
- minutes before meal time, turn oven to 300 degrees to warm roast. Works
- with any size or type of roast.
- Excellent for football games - cooks while you watch the game.

Title: Perfect Brown Rice

2 1/4 c Water; * see note
1 c Long-grain brown rice
1/2 ts Salt; * see note
*You may substitute chicken, beef, or vegetable broth. If using
non-low-sodium broth, omit salt.
In a medium-size (1 1/2 quart) heavy saucepan, combine 2 1/4 cups water or
broth with rice and salt. Bring to a boil, stirring well. Cover, then cook
on medium-low for 25 minutes. Check the rice for tenderness and continue
cooking 5 minutes, covered, if necessary. Remove from the heat and let set
5 minutes. Fluff with a fork.
Makes 3 cups.
