Picante Potato Salad

 Ingredients List

  • 1 lb Cooked new potatoes
  • Diced (4 c)
  • 1 c Can corn; drained
  • 1 sm Red bell pepper; diced
  • 1/2 c Green onions; sliced
  • 1/2 c Picante sauce
  • 2 tb Vegetable oil
  • 2 tb Cider vinegar
  • 1/2 ts Ground cumin
  • 1/4 ts Salt
  • 2 tb Cilantro; chopped, opt

 Directions

Combine potatoes, corn , pepper, and onions in medium bowl. Combine picante
sauce,oil, vinegar, cumin and salt; mix well. Gently toss with potato
mixture; chill. Sprinkle with cilantro,and serve with additional picante
sauce.
