 Ingredients List

  • 2 1/4 lb Tomatoes; seeded, finely
  • -chopped
  • 1 lg Onion; finely chopped
  • 3/4 c Fresh cilantro; chopped
  • 5 lg Garlic cloves; minced
  • 3 lg Jalapeno chile pepper;
  • -seeded, minced
  • 3 tb Fresh lime juice
  • 1 ts Ground cumin
  • 1 ts Salt
  • 2 tb Extra virgin olive oil


Combine all ingredients in bowl. Season with salt and pepper. Cover; chill
at least 1 hour before serving.

NOTES : Yield: about 5 cups. Keeps well chilled.
