- 1 (8-oz) can crushed pineapple, undrained
- 1/2 cup shredded coconut
- 1/2 cup butter, melted
- 1 Tbsp cornmeal
- 1 Tbsp flour
- 2 tsp vanilla
- 2 cups sugar
- 4 eggs, beaten
- 1 (9-inch) frozen deep dish pie crust
Directions
Preheat oven to 350ºF.
Whisk together pineapple, coconut, butter, cornmeal, flour, vanilla, sugar, and eggs.
Pour into pie crust.
Bake 50 to 60 minutes, until set.
