Pineapple Muffins

 Ingredients List

  • 2 c All-purpose flour
  • 2 ts Baking powder
  • 1 ts Baking soda
  • 1/2 ts Salt
  • 1/2 c White sugar
  • 1 lg Egg
  • 4 tb Oil
  • 1 c Pineapple; crushed
  • 1/2 c Pineapple juice

 Directions

Sift flour. Add baking powder, soda, salt. Sift again. Beat the egg with
the sugar. Add the oil, pineapple and juice. Make a hole in the dry
ingredients and add the liquid ingredients. Stir just enough to moisten. Do
Not Overbeat! Fill prepared muffin tin 2/3 full. Bake in 400 F oven for
20-30 minutes.
