Pineapple Pork Chops

 Ingredients List

  • 1 tb Vegetable oil
  • 4 Boneless pork chops; (3/4"
  • -thick)
  • 1 Clove garlic; finely chopped
  • 1 md Red bell pepper; cut in 1'
  • -PIECES
  • 2 tb Soy sauce
  • 2 tb Dry sherry
  • 1 cn (20 oz.) can pineapple
  • -chunks; reserve liquid
  • 1 tb Water
  • 1 1/2 ts Cornstarch

 Directions

Heat oil in skillet; brown pork chops approximately 6 minutes. Remove chops
and set aside. Add garlic and bell peppers; cook 1 minute. Stir in soy
sauce, sherry and reserved pineapple liquid. Return chops and let simmer 5
minutes. Stir in pineapple, water and cornstarch. Blend together and simmer
for 5 more minutes or until done and sauce is slightly thickened.
