Pineapple Pound Cake

 Ingredients List

  • 1/2 c Butter or shortening
  • 3 lg Eggs
  • 1/2 c Unsweetened frozen pineapple
  • Juice concentrate, thawed
  • 1/2 c Water
  • 2 1/2 c White flour
  • 1 ts Baking soda
  • 1 ts Baking powder


In a large mixing bowl beat together butter (or shortening), eggs,
pineapple juice concentrate, and water until thoroughly blended. Add flour,
baking soda, and baking powder; beat just until blended.

Spoon mixture evening into a 9" x 5" oiled and floured loaf pan. Bake in a
preheated oven at 350 degrees for 45 minutes or until knife inserted comes
out clean. Cool on a wire rack.
