Pineapple Salmon Foil Packs Recipe

  • ¼ of a medium pineapple, peeled, core removed, and sliced
  • 1 large lime (for zest and slices)
  • 2-5 oz. salmon filets
  • Pinch of salt
  • 1 tsp. honey

 Directions

Preheat oven to 325 degrees F. Tear off 2 pieces of aluminum foil that are big enough to wrap around your salmon with room to spare.

Zest the lime until you have ½ a teaspoon of lime zest. Then, thinly slice the lime to get 6-8 slices.

Lay 3-4 slices of lime in the center of each piece of foil. Lay the salmon on the lime. Sprinkle each piece of salmon with a pinch of salt.

Divide the lime zest and honey among the salmon pieces. Drizzle on the honey and sprinkle on the lime zest to create an even layer.

Cover the salmon with pineapple slices (about â…“ cup each).

Bring the long edges of the foil together and fold it over a few times.

Fold both of the short edges in until a sealed packet is formed.

Place the packets on a baking sheet and bake for 25-30 minutes (depending on the thickness of your salmon). Salmon should flake when pressed with a fork.
