Plum Tomato Salsa with Sherry Vinegar

 Ingredients List

  • 6 Plum tomatoes, peeled,
  • Seeded, and cut into 1/2"
  • Dice
  • 1 Medium shallot, sliced thin
  • 1 Serrano chile, seeded and
  • Sliced thin
  • 2 tb Sherry vinegar
  • 1/2 c Olive oil
  • 1/2 ts Chopped fresh thyme, or
  • 1/4 ts dried
  • 1 tb Chopped fresh cilantro
  • 1 tb Chopped fresh parsley
  • Salt and ground black
  • Pepper to taste.

 Directions

Mix all ingredients together in medium bowl. Serve within 2 hours.
