Plum Tomato Salsa with Sherry Vinegar

Ingredients List
- 6 Plum tomatoes, peeled,
- Seeded, and cut into 1/2"
- Dice
- 1 Medium shallot, sliced thin
- 1 Serrano chile, seeded and
- Sliced thin
- 2 tb Sherry vinegar
- 1/2 c Olive oil
- 1/2 ts Chopped fresh thyme, or
- 1/4 ts dried
- 1 tb Chopped fresh cilantro
- 1 tb Chopped fresh parsley
- Salt and ground black
- Pepper to taste.
Directions
Mix all ingredients together in medium bowl. Serve within 2 hours.
