Pork Piccata

Ingredients List
- 3/4 lb Pork tenderloin
- 1/2 c Salad dressing;or mayonnaise
- 1/4 c Seasoned bread crumbs
- 1 tb Parmesan cheese;grated
- 1 tb Margarine
- 1 Garlic clove; minced
- 1 tb Milk
- 1 tb Capers; drained (optional)
- 1 ts Lemon juice
Directions
Slice pork into 3/4" slices; pound to 1/4" thickness. Spread pork
generously w/ 1/4 cup salad dressing. Combine crumbs & cheese. Coat pork w/
crumb mixture. Melt margarine. Add garlic; cook until tender. Reduce heat.
Add pork; cook until meat is no longer pink. Combine remaining salad
dressing, milk, capers & juice; mix well. Serve with pork. Serve w/ your
