Pork Tenderloin With Red Cabbage

Ingredients List
- 1 tablespoons coconut oil
- 2 pork tenderloins (about 1 1/2 pounds total)
- 1 tablespoon paprika
- 1/2 tablespoon thyme
- 1/2 teaspoon ground mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 head red cabbage, thinly sliced (about 6 cups)
- 1/8 cup red wine
- 2 teaspoons red wine vinegar (optional)
- 1/4 cup chopped fresh flat-leaf parsley
- 1 cup applesauce (optional)
Directions
1. Season the pork with paprika, thyme, ground mustard, ½ teaspoon salt and pepper. Set aside.
2. Heat oven to 450° F.
3. Heat the oil in a Creuset or another large ovenproof skillet over medium-high heat. Once heated, place the pork in it and cook, turning occasionally, until browned, 8 to 10 minutes.
4. Add the cabbage to the skillet with the pork, season it with ½ teaspoon salt, pour in the red wine and toss to coat. Cook approximately 2-3 min until the wine has almost evaporated.
5. Transfer to oven and cook just until the pork is no longer pink, 15 minutes. Remove the pork and let rest for 5 minutes before slicing.
6. Add the vinegar and parsley to the cabbage and toss to combine.
7. Carve the pork into thin slices. Serve with the cabbage and applesauce (if desired). Enjoy!
