Potato - Spinach Bake

 Ingredients List

  • 4 Baking potatoes
  • 3/4 c Tofu
  • 1 pk Frozen chopped spinach
  • 3/4 c Nonfat yogurt
  • 1 lg Onion; diced
  • 1 Clove garlic
  • 1/2 ts Salt
  • 1/2 ts Pepper

 Directions

Cook potatoes in oven or microwave until done. Defrost the spinach and
drain off most of the liquid. Sauti the onion and garlic. Scoop potatoes
from their skins and mash. Combine potatoes with the rest of the
ingredients. Spoon into a sprayed casserole dish and microwave for about 15
minutes or bake in a regular oven at medium heat until just starting to
brown.
