Potatoes Duchesse

 Ingredients List

  • 4 Whole potatoes
  • 1/2 c Hot milk
  • 2 tb Butter -- melted
  • 1 ts Salt
  • 1/4 ts Black pepper
  • 1/4 ts Nutmeg
  • 2 Eggs
  • 2 Egg yolks

 Directions

Boil potatoes until tender. Mash with 1/4 cup milk, butter, salt, pepper,
and nutmeg. Beat eggs and egg yolks together, then beat in remaining milk.
Beat egg mixture into potatoes until fluffy. Serve at once.
