Prawns with Plum Sauce and Limes

 Ingredients List

  • 12 oz. shrimp (about 8 large ones)
  • 1/4 oz. ginger
  • 1/4 oz. garlic
  • 1/4 oz. red chili peppers
  • 1/4 oz. green chili peppers
  • 2 large limes
  • 6 small limes
  • 3 oz. plum sauce
  • 1 T. vegetable oil
  • 1/2 tsp. white ground pepper
  • 1/2 tsp. salt
  • 1 tsp. cornstarch

 Directions

Devein the prawns from the back, wash and drain. Squeeze the juice of the large limes. Pickle the prawns with the salt, ground pepper and lime juice in the fridge for 2 hours. Slice the garlic, and shred the ginger and chili peppers. Blend the plum sauce with an equal amount of water.
Take the prawns out of the fridge. Use a piece of kitchen paper to absorb the water on surfaces of the prawns. Apply the cornstarch onto the prawns with hand. Add only a very thin layer of starch, otherwise the shrimp will absorb too much oil. Heat the oil in a pan and stir fry the prawns until they get cooked.
Take out the prawns, and use the remaining oil in the pan to saute the garlic, ginger and shredded chilies to bring about their aromas. Add the prawns and diluted plum sauce. Cook for 30 seconds and then slightly stir until the sauce thickens.
Squeeze a little more juice from the used large limes onto the prawns, in order to brighten their color. Serve garnished with the small limes.
