Pumpkin Sweet Potato Bread

Ingredients List
- SWEET POTATO BREAD:
- 1 3/4 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs beaten
- 1 8 oz. can crushed pineapple drained
- 1 cup pumpkin
- 1 cup grated sweet potato
- 3/4 cup light brown sugar
- 1/2 teaspoon ground ginger
- 1/4 cup vegetable oil
- MAPLE GLAZE:
- 4 oz. cream cheese softened
- 1/4 cup milk
- 6 Tablespoons powdered sugar
- 1 Tablespoon maple syrup
Directions
Preheat oven to 350F degrees. Spray a 9x5 inch loaf pan with cooking spray.
In a large bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
In a medium bowl, mix eggs, pineapple, pumpkin, sweet potato, brown sugar, and ginger together.
Add pumpkin mixture to the dry ingredients and stir until combined. Add oil, stirring to combine. Spoon into prepared pan.
Bake for 55 minutes - 1 hour. Let cool completely on a wire rack.
MAPLE GLAZE:
In a medium bowl, which cream cheese until smooth. Gradually add milk. Add powdered sugar and maple syrup, whisking until smooth. Drizzle on top of cooled bread. Sprinkle with chopped pecans.
