Quick Coconut Bread

 Ingredients List

  • 4 c Flour
  • 1/3 c Sugar
  • 2 ts Baking powder
  • 1/4 ts Salt
  • 1 Egg, beaten
  • 1 c Canned or fresh coconut milk
  • Or milk
  • 1/2 c Butter/margarine, melted
  • 1 ts Vanilla extract
  • 2 c Grated unsweetened coconut
  • 1 c Currents or raisins
  • (optional)

 Directions

Preheat oven to 350 degrees F. Sift dry ingrediants into mixing bowl,
blend in egg, milk, butter and vanilla. Mix in coconut and
currents/raisins if used. Turn out onto floured board and knead
slightly. Shape into 2 loaves and pat into 2 buttered med. loaf
pans. Bake 40-45 min., until a toothpick in the center comes out
clean.
