Quick Lemon Rice Soup

 Ingredients List

  • 1 sm Onion or 3 scallions;
  • -chopped
  • 3 c Fresh kale; chopped
  • 1/2 ts Garlic powder
  • 1/8 ts Black pepper
  • 1/8 ts Tumeric
  • 1/3 c Vegetable broth
  • 3 c Pre-cooked rice
  • 8 c Water or vegetable broth
  • 1/4 c Lemon juice
  • 1 c Nutritional yeast
  • 1 tb Tamari or soy sauce

 Directions

In a large pot, saute onion, kale, and seasonings in 1/3 c vegetable broth
over medium heat for 5 minutes. Add remaining ingredients and simmer for 10
minutes longer. Serve warm.
