Quick Lemon Rice Soup
Ingredients List
- 1 sm Onion or 3 scallions;
- -chopped
- 3 c Fresh kale; chopped
- 1/2 ts Garlic powder
- 1/8 ts Black pepper
- 1/8 ts Tumeric
- 1/3 c Vegetable broth
- 3 c Pre-cooked rice
- 8 c Water or vegetable broth
- 1/4 c Lemon juice
- 1 c Nutritional yeast
- 1 tb Tamari or soy sauce
Directions
In a large pot, saute onion, kale, and seasonings in 1/3 c vegetable broth
over medium heat for 5 minutes. Add remaining ingredients and simmer for 10
minutes longer. Serve warm.
