 Ingredients List

  • --------------------------SAUTE IN VEGETABLE STOCK--------------------------
  • 2 Larges onions, diced
  • 1 Carrot, grated
  • 1 Green pepper, diced
  • 2 ts Cumin
  • 2 ts {or more} chilli
  • 2 ts Minced garlic
  • 1 Taco seasoning mix


1 To 2 cups frozen corn
1 cn Kidney beans, drained &
1 cn Tomatoes
1 c Leftover rice & peas.
1/4 c Cracked wheat

It made a huge amount, so will no doubt be eating for rest of week.
