Quick Tomato Barley Soup with Celery Lf

 Ingredients List

  • 28 oz Italian tomatoes; canned
  • 2 1/4 c Salt-free defatted chicken
  • -broth; or vegetable broth
  • 1/2 c Pearl barley
  • 1 tb Chopped fresh basil; or
  • -1/2-tsp dried
  • 1/8 ts Celery seed; ground
  • 1 ds Allspice

 Directions

Puree tomatoes in a food processor. Pour into a saucepan and add remaining
ingredients. Bring to a boil. Reduce heat and simmer, stirring
occasionally, for about 30 minutes or until barley is soft. Simmer until
mellow. Makes generous 6 cups. EACH CUP 178 cals with 8% cff (2 g fat).
