Quinoa Pudding

 Ingredients List

  • 2 c Quinoa, cooked -- (basic
  • Recipe)
  • 3 c Soy or rice milk -- or cows
  • Milk
  • 1/3 c Honey -- Or
  • 1/2 c Brown sugar (if using real
  • Mex cane sugar -- use less)
  • Egg subst. for 3 eggs -- or
  • 3 Eggs
  • 1/8 ts Salt
  • 1 tb Soy butter or oil -- (or
  • Butter)
  • 1 ts Vanilla
  • 1/2 c Raisins
  • 1/2 c Shredded coconut
  • 1/2 c Almonds or walnuts --
  • Ground
  • 1/2 ts Cinnamon
  • 1/2 ts Lemon or orange rind --
  • Grated
  • 1 ts Lemon juice

 Directions

Combine all ingredients. Pour nto greased baking dish or greased individual
custard cups. Bake n 350 degree oven until set, about 45 minutes. Serve
hot or cold, topped with vegan yogurt, soy or rice cream or apple juice.
