Quinoa Stuffed Peppers-Enjoy !!

Ingredients List
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 2 ribs celery, finely chopped
- 1 tablespoon ground cumin
- 2 cloves garlic, minced
- 1 6-oz package fresh spinach, chopped
- 2 fresh tomatoes, chopped
- 1 15-oz can black or pinto beans, rinsed and drained
- 3/4 cup quinoa, uncooked
- 3 large carrots, finely chopped or grated
- 2 cups water
- 1 1/2 cups pepper jack, monterey jack, or mozzerella cheese, divided
- salt and pepper, to taste
- 4 large bell peppers, halved lengthwise, ribs removed
Directions
Preheat oven to 350 and spray baking dish with non-stick spray.
Heat oil in saucepan over medium heat. Add onion and celery and cook until soft 4-6 minutes. Add cumin and garlic and saute for 1 minute. Stir in spinach and drained tomatoes. Cooked about 5 minutes, until spinach is wilted and most of liquid is evaporated.
Stir in black beans, quinoa, carrots and 2 cups water. Cover and bring to a boil. Reduce heat to medium-low and simmer about 20 minutes or until quinoa is tender. Stir in one cup cheese. Season with salt and pepper, if desired.
Lay bell pepper halves in baking pan with middle facing up. Divide filling between each bell pepper half. Cover with foil and bake 1 hour. Uncover and sprinkle each half with remaining cheese. Bake 15 minutes more or until tops of peppers are browned. Let stand 5 minutes.
