Raspberry meringue crush

 Ingredients List

  • 2 x 120g punnets fresh raspberries
  • 45g (1/4 cup) icing sugar mixture
  • 250ml (1 cup) pouring cream
  • 4 individual meringue nests, broken into large pieces
  • 60ml (1/4 cup) maple syrup


Step 1
Place raspberries and half the icing sugar in a bowl. Use a fork to coarsely mash until well combined.
Step 2
Use an electric beater to beat the cream and remaining icing sugar in a bowl until soft peaks form.
Step 3
Divide the meringue among four 250ml (1-cup) capacity serving glasses. Spoon over the raspberry mixture. Top with the cream mixture. Drizzle over the maple syrup to serve.
