Recette Soupe Au Pistou

  • - 100 g red beans
  • - 100 g of yellow beans
  • - 100 g green beans
  • - 3 potatoes
  • - 2 courgettes
  • - 3 carrots
  • - 2 leeks
  • - 1 onion
  • - 1 stalk celery
  • For the pesto :
  • - 2 fresh tomatoes, peeled and seeded
  • - 3 cloves garlic
  • - 50 g grated Parmesan cheese (or cheese )
  • - a big bunch of basil
  • - olive oil

 Directions

Soak the beans for about two hours in cold water. Meanwhile, cut the vegetables into small cubes. Once thoroughly rinsed beans, cook very small covered 3l fire in cold water. When water trembles, add the vegetables, increase heat to a rolling boil, then reduce it and leave uncovered. Season with salt and pepper (pepper with seeds barely broken, it's even better). Bake about 1:30. For the pistou. throw tomatoes a few seconds in boiling water, then peel and seed in a mortar, crush the basil with garlic, until a kind of cream, add cheese , pound, then add a little olive oil as you go. Reserve the mixture. Mash the tomatoes in the mortar until a paste , then add them to the mixture. Mix again and refrigerate. Serve hot or cold soup, adding to your taste pesto and olive oil.
