Recipe: Cheesy Chicken Arepas

Ingredients List
- 2 cups cold water
- 2 cups fat-free chicken broth
- 5 garlic cloves, crushed
- 1/2 teaspoon ground cumin
- 1/2 medium onion, sliced
- 2 skinless, boneless chicken breasts, sliced into thirds
- 1 tbsp low fat cream cheese (optional)
- 1/3 cup corn (optional)
- 1/3 cup of black beans (optional)
- 1 cup of Maseca (corn flour) plus extra for the board
- 1 1/2 cup warm water
- 3-4 tbsp. of butter or olive oil (or a combo)
- 1 cup shredded cheddar cheese
- Other toppings to taste: salsa, sour cream, scallions, peppers, onions, et
Directions
1. Combine the first 6 ingredients in a saucepan over medium heat and bring to a simmer.
2. Cook 10 minutes or until the chicken is done.
3. Remove the chicken from the pan and set aside (reserve and freeze the stock for a future recipe if you choose).
4. Let stand 10 minutes and once slightly cooled, shred the chicken and set aside.
5. While the chicken is cooling, mix the Maseca with 1 1/2 cup warm water to make the Arepa dough.
6. Stir to combine and let sit for 5-10 minutes.
7. To the shredded chicken, add the cream cheese, black beans and corn.
8. Stir to combine and set aside.
9. Stir and combine the Arepas mixture again and divide in half.
10. Lightly flour a surface with more corn flour.
11. Make five even balls from each half of the Arepas mixture to make 10 total balls.
12. Press the balls between your palms to create round discs about 1/2 inch thick.
13. Preheat a large skillet on medium-high heat.
14. Add 2 tbsp butter or oil to the skillet.
15. Add 5 of the Arepas and brown, about 5 minutes per side.
16. Set aside and repeat with the last 5 patties.
17. Top each Arepa with some shredded chicken and the cheese and whichever other toppings you choose.
