Recipe:Spicy Buffalo Chicken Wraps

 Ingredients List

  • 3 cups reduced-sodium chicken broth
  • 1 lb boneless, skinless chicken breast
  • 4 wedges The Laughing Cow® Light Blue Cheese
  • 6 oz non-fat plain Greek yogurt
  • ¼ cup Wing It® Buffalo Sauce
  • 1 cup celery, diced
  • â…› tsp salt
  • ¼ tsp black pepper
  • 8 ”” small La Tortilla Factory® High Fiber, Low Carb Whole Wheat Tortillas
  • 4 cups romaine lettuce
  • 1 cup tomato, diced
  • ½ cup red onion, thinly sliced
  • Optional*:
  • Skinny Mom's Light Bleu Cheese Dressing
  • Wing It® Buffalo Sauce
  • *Optional ingredients are not included in nutritional calculations.

 Directions

1. In a sauce pan over medium heat, add chicken broth and chicken. Cover and bring to boil. Turn heat down to medium-low and simmer for 10-12 minutes or until chicken is cooked through. Remove from heat. Drain liquid and allow chicken to cool before shredding it.

2.In mixing bowl, combine yogurt, buffalo sauce, chicken, celery, salt and pepper ”” gently mix until chicken is well-coated.

3. Warm tortillas in skillet on each side (or microwave).

4. Spread ½ wedge of The Laughing Cow® Light Blue Cheese on each tortilla.

5. Scoop ½ cup of chicken mixture down the center of each tortilla. Top with ½ cup lettuce, â…› cup tomato and 1 Tbsp red onion. Roll up and serve with (optional) Skinny Mom's Light Bleu Cheese Dressing or additional Wing It® Buffalo Sauce for dipping.
