Red Beans and Rice #03

 Ingredients List

  • 1 lb Dried red beans
  • 1 Meaty ham bone
  • 2 lg Onions; chopped
  • 1 c Parsley; chopped
  • 3 Cloves (large) garlic;
  • -chopped
  • 1 tb Salt
  • 1 ds Red pepper
  • 1 ts Black pepper
  • 1/4 ts Sugar
  • 1 ds Hot sauce
  • 1/4 ts Oregano leaves
  • 1/4 ts Thyme leaves
  • 1 tb Worcestershire sauce
  • 4 oz Tomato sauce
  • 1 1/2 lb Ground Italian sausage;
  • -cooked & drained

 Directions

Soak beans overnight in water to cover. Pour beans & water into a pot & add
ham bone. Add water to cover. Cook slowly 3 hours. Add all other
ingredients to beans except sausage. Cook uncovered 1 hour. Cool overnight,
if possible. When ready to serve, warm with sausage & serve over rice.
Serves 8.
