Red Potato Skewers

 Ingredients List

  • 2 lb Red potatoes (about 6
  • -medium); quartered
  • 1/2 c Water
  • 1/2 c Mayonnaise
  • 1/4 c Chicken broth
  • 2 ts Dried oregano
  • 1/2 ts Garlic powder
  • 1/2 ts Onion powder


Place the potatoes in an ungreased microwave-safe 2 Qt. dish. Cover and
microwave on high for 12-14 minutes, stirring once and then draining.
Combine remaining ingredients in a bowl; add potatoes. Cover and
refrigerate for 1 hour. Drain, reserving marinade. Thread potatoes on
metal, or or water soaked bamboo skewers. Grill, uncovered, over medium
heat for 4 minutes, turn, brush with reserved marinade, and grill for 4
minutes more.
