Red White Green Potato Salad

Ingredients List
- 3 pounds medium red-skinned potatoes, unpeeled, scrubbed
- 4-5 dill pickles or cornichon, chopped (about 1 cup)
- 3 celery stalks, chopped (about 1 cup)
- 3 hard-boiled eggs, peeled, chopped
- 1/2 red onion, chopped (about 1 cup)
- 2/3 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
Directions
1. Boil the potatoes in a large pot of boiling salted water until they are fork tender. Drain and let them cool to room temperature.
2. Quarter the cooled potatoes and transfer them to a large bowl. Mix in the pickles, celery, eggs, and onions and fold over the potatoes.
3. In a separate bowl, mix the mayonnaise, mustard and apple cider vinegar. (Steps 1, 2 and 3 can be made 1 day ahead. Make sure to cover and refrigerate.)
4. An hour before serving, pour the mayonnaise-dijon mix over the potatoes. Mix wll and let stand at room temperature for one hour before serving. Enjoy!
