Ingredients List
- 4 medium overripe bananas, mashed
- 1 egg
- 3/4 c. sugar
- 1/4 c. vegetable oil
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla
- 1 1/2 cups All Purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp. baking soda
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1 c. semi sweet chocolate chips
- 1 cup chopped Reese's peanut butter cups
Directions
Preheat oven to 350ºF.
Whisk together the bananas, sugar, egg, oil, peanut butter, and vanilla until smooth.
In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet and just mix until batter forms.
Gently fold in the chocolate chips and peanut butter cups, careful to not overmix.
Line a 9x5 loaf pan with foil or parchment and lightly spray with non-stick cooking spray. Pour the batter into the prepared pan. Bake for 55 minutes (start checking for done-ness at 45 minutes, cover the top with foil at that point if needed to prevent over-browning).
Let cool before slicing.
