Refreshing Scallop Ceviche

Ingredients List
- 4 sea scallops (approx. 1/2 pound)
- 4 tablespoons lime or key lime juice
- 2 tablespoons finely chopped red onion
- 1 scallion, thinly sliced
- 1 clove garlic, grated
- 1 teaspoon chopped fresh cilantro
- 1/4 jalapeño, finely sliced
- 1/2 teaspoon sugar
- pinch salt
- Optional: white toast, black bread or chips
Directions
1. Dice the 4 scallops into 1/4-inch cubes
2. At least 2 1/2 hours and as much as 12 hours before serving, mix together the lime juice, onion, scallion, garlic, cilantro, jalapeno, sugar and salt.
3. Add the diced scallops, and toss. Cover, and refrigerate for at least 2 1/2 hours.
4. Take the ceviche out of the fridge and let it stand at room temperature for a few minutes before serving, to take the chill off.
5. Serve with wedges of lime, if desired, and thinly sliced white toast, black bread or chips.
