Refrigerator Peach Chutney

 Ingredients List

  • 2 ts Oil
  • 1/4 c Chopped onion
  • 1/2 ts Grated fresh gingerroot
  • 1/2 ts Curry powder
  • 1 tb Dried currants
  • 1 tb Packed light brown sugar
  • 1 tb Apple cider vinegar
  • 1 c Chopped fresh, frozen or
  • Canned peaches


Heat oil in skillet. Add onion, gingerroot and curry powder. Cook over
Med-Low heat for 4-6 minutes, stirring occasionally until onions are
tender. Stir in currants, sugar and vinegar. Cook for 1-2 minutes. until
syrupy. Remove from heat and stir in peaches. Warm through and serve at
room temperature or cover and refrigerate up to three days.
