Remoulade Mayonnaise

 Ingredients List

  • 1 c Prepared mayonnaise
  • 1 Scallion; (3 inches of green
  • -left on)
  • 2 ts Tiny capers; chopped
  • 1 tb Flat leaf parsley; (chopped)
  • 1 tb Dijon-style mustard
  • 2 ts Whole-grain mustard
  • 1 ts Tarragon vinegar
  • 1/4 ts Tabasco sauce
  • Salt and freshly ground
  • Black pepper; to taste

 Directions

Combine all of the ingredients in a small bowl. Refrigerate, covered, until
time to use.

Makes 1 1/4 cups. Per 1 tablespoon: 82 calories, .3g carbohydrates, .2g
protein, 9g fat,
6 mg cholesterol

This is a lovely dipping sauce to make fresh. It's similar to tartar sauce
but with the spices of Louisiana.
