Rice Stuffed Tomatoes

 Ingredients List

  • 2 c Cooked rice
  • 1 tb Olive oil
  • 1/4 c Onion -- chopped
  • 80 ml Garlic; roasted -- minced
  • 1/4 c Green peppers -- chopped
  • 2 tb Parsley -- minced
  • 1/4 c Pulp from tomatoes
  • 4 Tomatoes
  • 2 tb Parmesan

 Directions

Slice tops off of tomatoes. Remove pulp and saute in oil with onions,
garlic and peppers. Toss with rice, salt and pepper. Stuff tomatoes. Put
tomatoes in a pan, pour a little wine and water in bottom. Bake 15 minutes
at 350~.
