Ricotta Pancakes
Ricotta Pancakes

Ingredients List
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1½ cups milk
- ½ cup Ricotta cheese
- ¼ cup sugar
- 1 tablespoon vanilla
Directions
Place all the dry ingredients in a large bowl- then add the milk, egg, and vanilla. Using an electric mixer; mix the batter until smooth, and then mix in the Ricotta cheese.
In a lightly oiled griddle or cast iron skillet heated to medium high heat ladle the batter according to the size pancakes desired. (For me this was about ⅓ cup-but I make good size pancakes)
Cook the pancakes until bubbles form on top, and the pancake is golden brown on the bottom. Flip the pancake and cook until done. (Adjust the heat as needed-you don’t want the pancakes to get too dark before it is time to turn them.)
Serve with butter and Maple Syrup
