Roasted Cauliflower Salad with Lemon and Parsley

Ingredients List
- 1 head cauliflower, washed, cored, and sliced into 1/2 inch thick florets
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- zest of 1 lemon
- 1/3 cup parsley, minced
- 3 tablespoons fresh-squeezed lemon juice
Directions
1. Preheat the oven to 400 degrees. Spread the cauliflower florets out on a rimmed baking sheet. Drizzle with olive oil and sprinkle with sea salt and lemon zest.
2. Roast the cauliflower for 10 minutes, flip, and roast for another 10 ”“ 15 minutes, or until the cauliflower is soft and the edges are a light golden brown. Remove from baking sheet and set aside to cool.
3. Check salt levels, toss with lemon juice and parsley, and serve.
