Roasted Garlic Red Potatoes and Green Beans

 Ingredients List

  • 1 pound green beans
  • 8 red potatoes, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic salt
  • 1 teaspoon ground lemon ”“ black pepper (ground pepper is fine)
  • 1 teaspoon dried parsley
  • 1 teaspoon popcorn butter (you can use regular butter, melted)

 Directions

Preheat oven to 400 degrees and spray your baking pan with a non stick cooking spray
~ In a medium bowl mix together all the spices
~ Place potatoes in a large bowl and drizzle half the spice mixture over them. Toss until all are coated
~ Bake potatoes on one half of the baking sheet and bake for 15 minutes
~ Place green beans in bowl and drizzle the remaining spice mix over and toss until coated
~ Add green beans to baking dish (other half of potato pan) and bake for an additional 20-25 minutes or until potatoes are brown and fork tender

Serve combined in a large bowl or as separate side dishes.
