Ruth's Chris Sweet Potato Casserole

Ingredients List
- 1 cup brown sugar
- 2/3 cup all-purpose flour
- 1 cup chopped pecans
- 5 tablespoons butter, melted
- ~8 cups mashed sweet potatoes (I combined 29 oz and 40 oz cans of yams)
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 eggs, beaten
- 3 tablespoons butter
Directions
1. Preheat oven to 350 degrees.
2. Combine brown sugar, flour, pecans, and melted butter in a mixing bowl. Set aside.
3. In another mixing bowl, combine sweet potatoes, sugar, salt, vanilla, egg, and butter. Mix well. Pour mixture into a buttered 3-qt baking dish. Top with the pecan mixture. Bake for 35-45 minutes, until topping has browned slightly.
