Salad of Cod, Green Beans, Onions and Cherry Tomatoes

 Ingredients List

  • 3 1/2 oz Cod fillet -- broiled
  • 10 oz Green beans -- prepared
  • 2 tb Minced red onion
  • 8 -- sliced
  • DRESSING
  • 1 tb Fresh lime juice
  • 1 tb Raspberry vinegar
  • 1 tb Extra virgin olive oil
  • 1 ts Cilantro -- finely chopped
  • 1 ts Jalapeno -- minced
  • Salt and pepper
  • 2 tb Toasted wheat germ -- for
  • Topping

 Directions

Combine chunks of a broiled cod fillet with steamed green beans, cut in
1-inch lengths, some minced red onion, and a few sliced cherry tomatoes.

Toss the salad gently with a zesty dressing made from a tablespoon each of
lime juice, raspberry vinegar and olive oil. Season to taste with cilantro,
jalapenos, salt and pepper.

Add healthy calories from a carbohydrate, like wheat germ, and enjoy.
