Salted Caramel Squares

Ingredients List
- 2 1/3 cups (500g) caster sugar
- 2 cups (500ml) thickened cream
- 1/2 cup (125ml) liquid glucose
- 60g butter, chopped
- 1 1/2 teaspoons sea salt flakes
- Sea salt flakes, to sprinkle
Directions
Step 1
Lightly grease a 20cm square cake pan with butter. Line the base and sides with baking paper, allowing the sides to overhang.
Step 2
Combine the sugar, cream, glucose, butter and salt in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Increase heat to high and bring to the boil. Cook, stirring, for 10 minutes or until mixture reaches 118°C (soft ball stage) on a candy thermometer. Pour into the prepared pan. Sprinkle with extra salt. Set aside for 1 hour or until firm.
Step 3
Turn onto a clean work surface. Use a large sharp knife to cut into 3cm squares. Wrap each caramel square in wax paper.
