San Joaquin Oven Roast

 Ingredients List

  • 4 lb Chuck roast
  • 2 ts Salt
  • 1/4 ts Pepper
  • 2 tb Flour
  • 3/4 ts Crumbled marjoram leaves
  • 1/4 c Freeze dried shallots
  • Water

 Directions

Sprinkle both sides of meat with salt, pepper & marjoram. Place in
roasting pan in 500 oven; brown on both sides, turing once, 30-40
minutes. Sprinkle shallots over top of meat: cover, reduce heat to
350. Cook 1 hour or until tender. Measure pan drippings for gravy;
add enough water to measure 2 cups. Blend in flour; cook & stir until
thickened.
