Sauteed Plantains and Sweet Potatoes

 Ingredients List

  • 2 tb Butter or margarine
  • 2 tb Cooking oil
  • 2 c Sliced cooked sweet potatoes
  • -or yams
  • 2 Plantains, peeled & chopped
  • 1/2 c Chopped green onion
  • 1/2 c Chopped cooked ham (opt)
  • 1 Garlic clove, minced
  • 1/2 c Chicken or beef broth
  • 2 tb Butter or margarine
  • 2 tb Chopped fresh thyme, dill,
  • -chervil, or savory
  • Salt to taste
  • Pepper to taste

 Directions

In a large skillet, melt the first 2 tablespoons of butter and cooking oil
until hot. Add potatoes, plantains, onion, ham, if desired, and garlic.
Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10
minutes or until plantains are tender. Add remaining butter and desired
fresh herbs. Season, to taste, with salt and pepper.
