Ingredients List
- 2 tb Butter or margarine
- 2 tb Cooking oil
- 2 c Sliced cooked sweet potatoes
- -or yams
- 2 Plantains, peeled & chopped
- 1/2 c Chopped green onion
- 1/2 c Chopped cooked ham (opt)
- 1 Garlic clove, minced
- 1/2 c Chicken or beef broth
- 2 tb Butter or margarine
- 2 tb Chopped fresh thyme, dill,
- -chervil, or savory
- Salt to taste
- Pepper to taste
Directions
In a large skillet, melt the first 2 tablespoons of butter and cooking oil
until hot. Add potatoes, plantains, onion, ham, if desired, and garlic.
Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10
minutes or until plantains are tender. Add remaining butter and desired
fresh herbs. Season, to taste, with salt and pepper.
