Sauteed Zucchini with Walnuts

Ingredients List
- 2 tablespoons olive oil
- 2 teaspoon finely minced garlic
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 medium zucchini, cut in â…“ inch thick rounds and then halved to make semi-circles
- 3 tablespoons coarsely chopped walnuts
- ¼ cup Parmesan cheese
Directions
1. Heat olive oil in skillet over medium high heat.
2. Add garlic and saute for a minute.
3. Add zucchini pieces and let them cook for about 3 minutes, until they start to soften and the edges turn brown.
4. Turn over and brown the other side, about 2-3 more minutes.
5. Remove the zucchini from the skillet when it is softened but before it becomes mushy.
6. Sprinkle with chopped walnuts and Parmesan cheese, and serve.
