Savory Oven Pot Roast
Ingredients List
- 3 lb Rolled rump roast
- Salt, pepper, pinch of
- -nutmeg
- 4 tb Flour
- 1 tb Oil
- 1 Clove garlic; crushed
- 4 lg Onions; sliced
- 2 c Hot beef broth
- 2 tb Tomato paste
- 1 tb Sugar
- 1 tb Vinegar
- 1 ts Thyme
- 1 Bay leaf; broke
Directions
Combine flour, salt, pepper, and nutmeg. Dust beef with seasoned flour.
Heat oil in heavy pan; brown meat, then remove. Brown onions and garlic
lightly in pan. Replace meat; add remaining ingredients. Cover and bake at
350F until meat is tender, about 2 1/2 hours. Discard bay leaf. Serve with
pan gravy.
