Scallops Ceviche
Ingredients List
- 1 lb Very fresh scallops
- 1 c Fresh lime juice
- 6 cl Garlic - minced
- 1 Red pepper julienne
- 2 Jalapeno julienne
- 2 Roma tomato - chopped
- 3 tb Cilantro - chopped
- 1/2 c Olive oil
- Salt and Pepper to taste
Directions
Cut scallops into thirds. Place the scallops in a bowl and add ingredients.
Let stand 20-30 min before serving. do not keep more than 2-3 hours.
