Scallops Ceviche

 Ingredients List

  • 1 lb Very fresh scallops
  • 1 c Fresh lime juice
  • 6 cl Garlic - minced
  • 1 Red pepper julienne
  • 2 Jalapeno julienne
  • 2 Roma tomato - chopped
  • 3 tb Cilantro - chopped
  • 1/2 c Olive oil
  • Salt and Pepper to taste


Cut scallops into thirds. Place the scallops in a bowl and add ingredients.
Let stand 20-30 min before serving. do not keep more than 2-3 hours.
