Scotcheroo Banana Bread

Ingredients List
- 1 1/2 cups All Purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp. baking soda
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 2 slightly beaten egg whites
- 4 medium, overripe bananas
- 3/4 c. sugar
- 1 teaspoon vanilla
- 1/4 c. vegetable oil
- 3.4 ounces butterscotch pudding mix (dry)
- 1 c. semi sweet chocolate chips
- For the ganache:
- 2 cups butterscotch chips
- 3/4 cup creamy peanut butter
Directions
For the bread:
Preheat oven to 350 degrees F.
Mash the bananas (I usually beat mine in my stand mixer using the paddle attachment) until mostly smooth.
Mix in the egg whites, sugar, vanilla, pudding mix, and oil, mix well.
Add the flour, baking powder, baking soda, cinnamon, and salt. Only mix until the batter forms. Fold in the chocolate chips using a rubber spatula.
Pour batter into a greased and parchment lined loaf pan. A standard loaf pan will need to bake for about 45 minutes. Baking time will vary depending on the size of the loaf pan. A toothpick should come out clean before the removing the bread from the oven.
Let cool for 10-20 minutes before removing from the pan.
For the ganache:
Over low heat in a medium sauce pan, mix together the butterscotch chips and peanut butter until smooth and melted. Spread over the banana bread and let cool to set.
