Scrumptious Morning Glory Muffins

 Ingredients List

  • 2 c All purpose flour
  • 1 1/4 c Sugar
  • 1/2 ts Salt
  • 2 ts Baking soda
  • 2 ts Cinnamon
  • 2 c Carrots; grated
  • 1/2 c Raisins
  • 1/2 c Coconut
  • 1 Whole apple; peeled & cored
  • -& gra
  • 3 Whole egg
  • 1 c Oil
  • 2 ts Vanilla


Mix first five ingredients. Stir in the next four ingredients. In another
bowl, beat eggs, oil and vanilla. Stir into the flour mixture until batter
is "just" combined. Spoon into well-greased muffin cups, fill to top. Bake
at 350 deg F for 20 minutes.
