Shaved Apple and Almond Tart

  • crust:
  • 1 cup Nilla wafer crumbs
  • 4 tablespoons unsalted butter, melted
  • filling:
  • 6 tablespoons unsalted butter, softened
  • 2/3 cup sugar
  • 1 cup slivered almonds, finely ground
  • 1 large egg, beaten
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all purpose flour
  • 1 teaspoon tapioca starch
  • 1/4 teaspoon salt
  • 3 small apples, washed with stem removed
  • powdered sugar, for dusting

 Directions

1. Crust: Preheat oven to 350˚F. Place crumbs and butter in a mixing bowl and mix together until fully combined. Evenly press mixture into the bottom and sides of the tart shell and place onto a baking sheet. Par-bake for 10 minutes. Remove from oven and cool completely.
2. Filling: Place butter and sugar into a mixing bowl and beat together, using an electric hand mixer.
3. Add almonds and continue to beat together. Scrape down sides of the bowl and add egg, almond extract and vanilla extract.
4. Add flour, tapioca starch and salt and stir together until just combined.
5. Pour mixture into the cooled tart shell and smooth the top so the surface is flat and even.
6. For the shaved apple: Shave apples according to the instructions for the Vegetable Sheet Cutter attachment until all 3 apples have been shaved. Cut the long, shaved strips of apple into 3 inch strips, crosswise and slice each strip half, lengthwise.
7. Place 4 to 5 sheets of shaved apple onto a clean surface (side with the peel on top), slightly overlapping one another and roll into a tight or loose spiral. Place the spiral into the tart batter, skin side up. Repeat with the remaining strips of shaved apple and until the tart is filled with apple spirals to your liking.
8. Place tart in the oven for 25 to 30 minutes or until a toothpick comes out clean when inserted into the frangipane part of the tart.
9. Cool tart for 10 to 15 minutes before unmolding from the baking shell.
10. Dust tart with sugar, cut and serve.
