Shaved Green Mango and Cranberry Salad with Fresh Lobster

  • For the salad
  • 1 pound fresh Maine Lobster
  • 1 green mango shaved with a vegetable peeler
  • 1 cup dried cranberries
  • 1/4 cup almond slices
  • 1 ripe avocado diced
  • chives for garnish
  • For the dressing
  • 1/2 cup buttermilk
  • 2 Tb sour cream
  • 1/8 cup sugar
  • 1 Tb fresh lemon juice
  • pinch of kosher salt
  • sprinkle of black pepper
  • 2 Tb fresh chopped chives

 Directions

Top shaved green mango with fresh lobster, avocado, dried cranberries and almonds.
Whisk dressing ingredients together and fold onto salad.
